Lobs' to Love

We like creamy seafood sandwiches as much as anyone, but we can't bring ourselves to spend over 500 calories and dozens of fat grams on one. Luckily, we don't have to... and neither do you! Our slimmed-down lobster roll ROCKS.

One 4-oz. uncooked lobster tail, halved lengthwise (shell halves intact), deveined
2 tbsp. fat-free mayonnaise
1/4 tsp. lemon juice
Dash each salt and black pepper
2 tbsp. chopped celery
1 light hot dog bun (or HG Alternative)
1 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 lettuce leaf, torn into pieces
Optional topping: chopped scallions

In a medium pot, bring 1/2 cup water to a boil.

Reduce heat to medium. Add lobster, cover, and cook for about 3 minutes, until shell halves have turned red and lobster is cooked through. Remove lobster, and set aside to cool.

In a medium bowl, thoroughly mix mayo, lemon juice, salt, and pepper. Stir in celery.

Once cool, remove lobster meat from the shell, and chop into small pieces. Discard shell, and stir lobster meat into the mayo mixture.

Lightly toast hot dog bun, and spread the inside with butter. Lay lettuce pieces in the bun, and top with lobster mixture. Eat up!

While lobster itself is very low in calories and fat, the regionally beloved dish known as a lobster roll is anything but. For starters, the roll itself is usually way too large and carby -- it's also (believe it or not) often smeared with butter. And then there's the uber-fatty, mayo-laden goo that the lobster chunks are hanging out in. Some lobster rolls are even made with a BUTTER sauce instead of mayo... Either way, it's an unnecessarily fatty situation. We whipped up our own creamy hint-of-lemon sauce, complete with a nice bit of crunch, courtesy of celery. Add perfectly prepared lobster, a low-calorie bun, and a little light butter, and you've got a DIY guilt-free masterpiece! So when the desire for a handheld lobster fix hits you, remember you can totally make it on your own. (Not in a self-help, love-thyself kind of way; in a DIY food-swap way!)
