We love that Applebee's has put a new spin on the classic wedge salad, but WHY must it be so loaded with fat? Worry not, hungry friends. We've got a guilt-free remake straight ahead...

1/4 cup fat-free mayonnaise
1/4 cup fat-free plain yogurt
1 tbsp. chopped parsley
1 tbsp. chopped chives
2 tsp. lemon juice
1/8 tsp. garlic powder
1/8 tsp. each salt and black pepper

4 slices center-cut bacon or turkey bacon
1 large head iceberg lettuce
1/4 cup crumbled blue cheese
1/4 cup chopped pecans

Place all dressing ingredients in a small blender or food processor. Add 1 tbsp. water, and blend until smooth.

Cook bacon until crispy, either in a large skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)

Cut lettuce head into quarters, leaving you with 4 wedges. Remove the core portion of each wedge and any limp exterior leaves.

Chop or crumble bacon. Plate lettuce wedges, and top with dressing, blue cheese, pecans, and bacon. Dig in!

It's a common misconception that green salads are inherently guilt-free. And when you're looking at a big ol' quartered head of lettuce on a plate, it's even easier to make that mistaken assumption. But top anything with bacon, cheese, candied nuts, AND fatty dressing, and you've got a serious calorie catastrophe on your hands. Let's end the salad injustice, people! That poor iceberg lettuce deserves better. We had fun with this one. We made our own creamy green goddess dressing, and it's mind-meltingly good. The rest is about little modifications: using just the right amount of blue cheese crumbles, choosing leaner bacon, and opting for a sprinkling of plain pecans rather than too much of the candied kind. Even mere mortals can pull off a miraculous swap like this... Sorry, Applebee's. You lose!
