We're Down with Dan Dan!

If you love Chinese noodle dishes but not all the carbs and calories that typically come with 'em, it's time to try our brand-new recipe swap!

1 bag House Foods Tofu Shirataki Spaghetti Shaped Noodle Substitute
1/4 cup reduced-sodium chicken broth
1 tsp. cornstarch
1 1/2 tsp. lite/reduced-sodium soy sauce
1 1/2 tsp. oyster sauce
1/2 tsp. brown sugar (not packed)
1/4 tsp. red pepper flakes
4 oz. raw boneless skinless chicken breast, cut into bite-sized pieces
1 tsp. chopped garlic
2 tbsp. chopped scallions
Optional garnish: bean sprouts, matchstick-cut cucumber slices

Use a strainer to rinse and drain noodles. Thoroughly pat dry. Roughly cut noodles.

In a medium bowl, stir cornstarch into broth until dissolved. Add soy sauce, oyster sauce, brown sugar, and red pepper flakes. Mix well.

Bring a wok (or large skillet) sprayed with nonstick spray to medium heat. Add chicken and garlic. Cook and stir for about 4 minutes, until chicken is cooked through.

Stir sauce mixture and add to the wok. Add noodles. Cook and stir until sauce has slightly thickened and noodles are hot, about 2 minutes.

Stir in scallions and eat!

Fight it! P.F. Chang's Dan Dan Noodles
P.F. Chang's Dan Dan Noodles

Ban Ban Noodles...

They're not smothered in crazy-creamy or super-sugary sauce. The protein involved is chicken, not pork or beef. In fact, reading about the Dan Dan Noodles on the P.F. Chang's menu likely wouldn't sound any major nutritional alarms. But combine a pile of egg noodles, ground chicken (which is typically fattier than you might think), oil (used to stir-fry said chicken), and that famous (usually oily) sauce -- and it's no surprise that an order packs in nearly a THOUSAND calories! And that sodium count. MADNESS! Even if you're sharing it with friends, chances are you're also splitting several other (nutritionally questionable!) items. We fixed the noodles-too-carby problem with tofu shirataki, addressed the meat-too-fatty issue with chicken breast, and whipped up a sauce that's neither oily nor excessively salty. Make our Lisa Loves Dan Dan Noodles at home, and consult our Chinese Food Survival Guide the next time you go out. Yay, us!
