Healthy Bacon-Ranch Chicken Burrito

That's Good Burr'eatin!

There's no denying the allure of restaurant burritos, especially those with an extra-flavorful twist. But as tempting as they are, our lightened-up swap reigns supreme...

Prep: 10 minutes
Cook: 10 minutes

Ingredients:
1 slice center-cut bacon or turkey bacon
3 oz. raw boneless skinless chicken breast, cut into bite-sized pieces
1 tsp. lime juice
1/8 tsp. salt-free seasoning mix (like Mrs. Dash Original)
1 wedge The Laughing Cow Light Creamy Swiss cheese
1/4 tsp. ranch dressing/dip seasoning mix
1/2 oz. (about 1 tbsp.) mashed avocado
1/2 tsp. chipotle pepper sauce (like the kind by Tabasco)
1 medium-large high-fiber flour tortilla with 110 calories or less (like the kinds by La Tortilla Factory)
1/2 cup shredded lettuce
1/4 cup chopped tomato
2 tbsp. chopped onion

Directions:
Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)

Bring a skillet sprayed with nonstick spray to medium-high heat. Add chicken, and top with lime juice and salt-free seasoning. Cook and stir for about 4 minutes, until cooked through.

To make the sauce, in a small bowl, combine ranch seasoning with cheese wedge. Stir until smooth and well mixed. Add avocado and chipotle sauce, and stir until uniform.

Microwave tortilla on a microwave-safe plate for 15 seconds, or until warm.

Spread sauce down the middle of the tortilla, and top with lettuce, chicken, tomato, and onion. Chop or crumble bacon, and layer over the onion.

Wrap tortilla up by first folding in one side (to keep filling from escaping) and then tightly rolling it up from the bottom. (Or fold in both sides, burrito style.)

Epic Fail…

This fast-food burrito has us shaking our heads. The logic just isn't there. For starters, the thing is massive -- it's a lot more food than anyone needs in one sitting. (But saving part of a burrito is such a pain, so you usually end up scarfing the whole thing down and being uncomfortable afterward.) And two sauces plus guac, cheese, and pico de gallo, Del Taco? When you use that many condiments, they pretty much merge into one sauce. Also... Rice in a burrito? We don't need starches in our starches, thankyouverymuch. Today's HG burrito, on the other hand, makes a lot of sense. It's mega satisfying, without the portion-size angst. We made one sauce that's ranch-y, cheese-y, chipotle-y, and avocado-y. As for the bacon? We're on board, DT, but we're using the lean stuff. Simply put, our burrito is smarter than your burrito.
