The stats for this cheesy, eggy, bacon-y waffle breakfast are almost too good to be true... MAKE THIS SOON!!!




Ingredients:
1 slice center-cut bacon or turkey bacon
1 wedge The Laughing Cow Light Creamy Swiss cheese
1/2 tsp. dried minced onion
1 large egg
1 frozen low-fat waffle
2 slices tomato

Directions:
Bring a skillet sprayed with nonstick spray to medium heat on the stove. Add bacon and cook until crispy, about 4 minutes per side.

Remove bacon and set aside. Once cool enough to handle, chop or crumble and place in a bowl. Add cheese and onion to the bowl, and mix thoroughly. Set aside.

If needed, clean and dry skillet. Re-spray skillet and return to medium heat. Add egg and cook per your preference (we like it over medium!), about 2 minutes.

Meanwhile, toast the waffle and place on a plate. Spread bacon-cheese mixture on the waffle, and lay cooked egg on top. Lay tomato slices over the egg (or just serve them on the side).

Grab a knife 'n fork and go nuts!
