Healthy Mother's Day Recipes: Maple-Bacon French Toast Waffles, Stuffed Strawberries

Maple-Bacon French-Toasted Waffles

Like cashmere socks and manicures, breakfast in bed is one of those little luxuries that can make a lady feel extra-special. Get cooking!

2 frozen low-fat waffles
1 slice center-cut bacon or turkey bacon
1/3 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/2 tsp. maple extract
1/2 tsp. vanilla extract
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
2 tbsp. sugar-free pancake syrup
1 tsp. powdered sugar

Lightly toast waffles. Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)

In a wide bowl, mix egg substitute, maple extract, and vanilla extract.

Bring a skillet sprayed with nonstick spray to medium-high heat. Add butter and let it coat the bottom. Meanwhile, coat waffles on all sides with egg mixture. Cook waffles until golden brown, 3 - 4 minutes per side.

Plate waffles. Chop or crumble bacon, and sprinkle over waffles. Drizzle with syrup (or serve syrup on the side), sprinkle with powdered sugar, and enjoy!


Stuffed-with-Love Strawberries

A super-creative, crazy-delicious recipe that'll totally impress any mom. (And who doesn't want to impress Mom?)

1/2 tbsp. Jell-O Sugar Free Fat Free Vanilla Instant pudding mix

1/2 tbsp. Splenda No Calorie Sweetener (granulated), or HG Alternative
1 drop vanilla extract

1/4 cup Cool Whip Free (thawed)

2 tbsp. fat-free cream cheese, room temperature
6 extra-large strawberries
2 tsp. mini semi-sweet chocolate chips


In a medium bowl, combine pudding mix, sweetener, vanilla extract, and 1 tbsp. cold water. Stir vigorously until smooth and slightly thickened. Stir in Cool Whip and cream cheese until smooth.

Cover and refrigerate until chilled, about 10 minutes.

Slice the stem ends off the strawberries, about 1/2 inch, revealing an opening in each berry. Use a narrow spoon to remove about half of the flesh inside each berry, allowing room for filling.

Spoon pudding mixture into a bottom corner of a plastic bag; snip off the tip of that corner to create a small hole, and pipe the mixture through the hole into the strawberries.

Press chocolate chips into the exposed filling. Serve and enjoy!
