Sweet Potato + The Laughing Cow Creamy Queso Fresco Chipotle cheese wedge

An HG subscriber suggested this, and we're so glad she did! Just pierce an 8-oz. sweet potato several times with a fork. Microwave on a microwave-safe plate for 3 minutes, or until slightly softened. Flip potato and microwave for 3 more minutes, or until soft. Slice it open, and thoroughly mash the insides along with a wedge of the cheese. (Add a little salt, if you like.) Yummmm!


Seedless Cucumber + Seasoned Rice Vinegar

One quickie sunomono salad, coming right up! Just toss 1 cup thinly sliced seedless cucumber with 1 tbsp. seasoned rice vinegar. That's it! If you like, multiply the recipe and make a big batch to keep in the fridge; then you'll have a refreshing snack around all week long... 

Fat-Free Plain Greek Yogurt + Ranch Dressing/Dip Seasoning Mix

Large Shrimp + Cocktail Sauce

This is no ordinary shrimp cocktail... It's grilled shrimp cocktail on a stick! Start with 8 oz. (about 14) raw large shrimp, peeled and deveined with the tails removed. In a sealable container, toss to coat with 2 tbsp. cocktail sauce. Cover and let marinate in the fridge for 20 minutes. Meanwhile, if using wooden skewers, soak them in water to prevent burning. (You'll need two.) Thread shrimp onto two skewers, and discard the sauce used for marinating. Bring a grill or grill pan sprayed with nonstick spray to medium-high heat. Grill until shrimp are cooked through, 1 - 2 minutes per side. Serve with another 2 tbsp. cocktail sauce for dipping. Chomp, chomp!
