Beetles on a Board

Entire recipe: 183 calories, 2g fat, 183mg sodium, 40g carbs, 5g fiber, 31.5g sugars, 3g protein -- PointsPlus® value 5*

A quick twist on the traditional ants-on-a-log snack. Fresh grapes ROCK!!!

1 medium-large apple, cut into 12 half-moon slices
1 wedge The Laughing Cow Light Creamy Swiss Cheese
12 red grapes, halved


Spread one side of each apple slice with a thin smear of cheese. Top each cheesy slice with 2 grape halves. That's it. EAT!

Creamy Salsa Rollups

1/2 of recipe (1 rollup): 201 calories, 3g fat, 494mg sodium, 3g carbs, 0.5g fiber, 2g sugars, 35g protein -- PointsPlus® value 4*

This one's a bit messy, but totally worth it! Chicken exploding with cheesy tomato goodness... YUM!!!

Two 5-oz. raw boneless skinless chicken cutlets, pounded to 1/2-inch thickness
2 wedges The Laughing Cow Light Creamy Swiss cheese
1/4 cup thick salsa
Optional: salt and black pepper

Preheat oven to 350 degrees. Spray a baking pan with nonstick spray.

Season chicken cutlets with salt and pepper, if you like, and lay on a dry surface. Spread each with a cheese wedge, and evenly top with salsa.

Roll up each cutlet over the filling and, if needed, secure with toothpicks. Place in the baking pan.

Cover pan with foil and bake for 20 minutes.

Remove foil and bake until chicken is cooked through, about 15 minutes. Eat up!


HG Tip! To pound a chicken cutlet, either lay it between two pieces of plastic wrap or place it in a sealable bag, squeeze out the air, and seal. Using a meat mallet (or other heavy utensil with a flat surface), pound it until uniform in thickness.

Mini Cherry Cream Pies

1/6th of recipe (2 pies): 116 calories, 1g fat, 80mg sodium, 25g carbs, 1.5g fiber, 11.5g sugars, 1.5g protein -- PointsPlus® value 3*

Super-simple, super-delicious, and super-creamy. Make this dessert ASAP. Then invite over some cherry lovers to share it with!

12 wonton wrappers
3 cups frozen unsweetened dark sweet cherries, thawed and drained
1 1/2 cups Cool Whip Free (thawed)

Preheat oven to 350 degrees. Spray a 12-cup muffin pan with nonstick spray.

Place each wonton wrapper in a cup of the muffin pan, and press it into the bottom and sides. Lightly spray with nonstick spray. Bake until lightly browned, about 8 minutes. Set aside to cool.

In a large bowl, gently mix cherries with Cool Whip. Evenly distribute cherry mixture among the wonton cups, and enjoy!


HG Tip! Got leftovers? Put 'em in the freezer! These pies taste fantastic frozen. (If frozen solid, just let them thaw for a couple of minutes.) Mmmm...
