4 oz. (about 60) baked tortilla chips
6 oz. cooked and shredded (or finely chopped) chicken breast
2 tbsp. Frank's RedHot Original Cayenne Pepper Sauce

3 wedges The Laughing Cow Light Creamy Swiss cheese
2 tbsp. fat-free sour cream
1/4 cup crumbled blue cheese
1/4 cup finely chopped carrots
1/4 cup finely chopped celery

Preheat oven to 350 degrees. Spray a large ovenproof platter or baking sheet with nonstick spray.

Spread out tortilla chips on the platter or sheet.

In a medium bowl, mix chicken with hot sauce. Evenly distribute over chips.

Bake until chicken is hot, 6 - 8 minutes.

Meanwhile, in a medium microwave-safe bowl, stir cheese wedges until smooth. Add sour cream and 3 tbsp. water, and whisk until smooth. Stir in blue cheese. Microwave for 1 minute, or until hot.

Drizzle cheese mixture over the chicken. Sprinkle with carrots and celery, and enjoy!

Chicken Caesar Salad Pizza

Entire recipe: 326 calories, 9g fat, 833mg sodium, 37g carbs, 8g fiber, 3.5g sugars, 30.5g protein -- PointsPlus® value 8*

We put a slimmed-down version of classically delicious salad over a fabulous HG-approved crust. Yum? Yum indeed.

1 stick light string cheese

1 high-fiber pita

2 oz. cooked and finely chopped skinless chicken breast
2 cups finely chopped romaine lettuce
2 tbsp. finely chopped red onion
1 tbsp. light Caesar dressing
1 tsp. reduced-fat Parmesan-style grated topping

Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.

Break string cheese into thirds and place in a blender or food processor -- blend at high speed until shredded. (Or pull into shreds and roughly chop.)

Lay pita on the baking sheet, and sprinkle with shredded string cheese and chicken. Bake until hot and lightly browned, 8 - 10 minutes.

Let pita cool, about 10 minutes. To make the salad, mix romaine and onion in a medium-large bowl. Toss with dressing.

Top pita with salad and Parm-style topping. Grab a fork and knife, and dig in!
