Low-Calorie Birthday Desserts: Marshmallow Treats, Whoopie Pie

Happy early birthday to us! Tomorrow, Hungry Girl turns nine years old! (Yup, our free daily emails have been going out for NINE years now!) Whether or not it's your birthday, celebrate with these incredible birthday-inspired sweets!

Birthday Krispymallow Treats

1/15th of recipe (1 treat): 110 calories, 3g fat, 53mg sodium, 23g carbs, 4g fiber, 10g sugars, 1.5g protein -- PointsPlus® value 3*

If ever there were an HG recipe sure to bring out your inner child, this would be it. Have a square -- you don't even need to clean your room first!

3 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
1/8 tsp. almond extract
3 cups mini marshmallows
5 cups puffed wheat cereal
2 cups Fiber One Original bran cereal
1/4 cup mini semi-sweet chocolate chips
1/4 cup rainbow sprinkles


Spray a 9" X 13" baking pan with nonstick spray.

Place butter in a large nonstick pot and bring to low heat. Once butter has melted, add extract and marshmallows. Cook and stir until melted, about 10 minutes.

Remove pot from heat. Add both cereals, and gently stir until coated.

Using a spatula sprayed with nonstick spray, evenly press mixture into the baking pan.

Sprinkle with chocolate chips and sprinkles, and press down with the spatula to help them adhere.

Let cool completely, about 5 minutes. Slice and enjoy!


HG Tip! Lay a sheet of wax paper or parchment paper over the mixture in the pan, and press to smooth. 

Birthday Whoopie Pie

Entire recipe: 165 calories, 4g fat, 148mg sodium, 37g carbs, 9g fiber, 18g sugars, 4g protein -- PointsPlus® value 5*

The conundrum: You're craving a birthday-cake-style treat, but it's not your birthday, and you're snacking solo. The solution: this easy recipe!

1 Vitalicious Deep Chocolate VitaTop, partially thawed
3 tbsp. Cool Whip Free (thawed)
1 tsp. mini semi-sweet chocolate chips
1 tsp. rainbow sprinkles

Carefully slice VitaTop in half lengthwise (like you would a hamburger bun), so that you are left with 2 thin round "slices."

In a small bowl, fold chocolate chips into Cool Whip.

Spoon and spread Cool Whip mixture onto the bottom Vita slice. Top with the other slice to form a sandwich.

Gently press sprinkles into the exposed Cool Whip mixture on the sides of the sandwich.

Place on a plate and freeze until filling is firm, about 1 hour.
