Philly Cheesesteak Stuffed Peppers

The cheesy, beefy goodness that Philadelphia is known for... packed inside tasty bell peppers rather than big carby buns!

4 large green bell peppers (look for peppers that sit flat when stem ends are up)
1 lb. raw extra-lean ground beef (4% fat or less)
1 cup chopped onion
1 cup chopped mushrooms
4 slices 2% milk American cheese, torn into pieces
Spices: garlic powder, salt, black pepper

Preheat oven to 350 degrees.

Carefully slice off and discard about half an inch from the top (stem end) of each bell pepper. Remove and discard seeds. Place peppers cut-side up in a deep 9" X 13" baking pan. If peppers do not sit flat, gently lean them against the pan sides for support.

Bake until peppers are soft, 20 - 25 minutes.

Meanwhile, bring a large skillet sprayed with nonstick spray to medium-high heat. Add beef and sprinkle with 3/4 tsp. garlic powder and 1/2 tsp. each salt and black pepper. Add onion and mushrooms. Cook, stir, and crumble until beef is fully cooked and veggies have softened, about 10 minutes.

Transfer beef-veggie mixture to a large bowl. Add cheese pieces, and stir until melted and well mixed.

Blot away excess moisture from bell peppers. Evenly distribute beef mixture among the peppers. Dig in!

Cheesy BBQ Chicken Rollups

How could we make BBQ chicken any better? We crammed it full of super-cheesy goodness, that's how!

3/4 cup bagged broccoli cole slaw, roughly chopped
2 wedges The Laughing Cow Light Creamy Swiss cheese
Two 5-oz. raw boneless skinless chicken breast cutlets, pounded to 1/2-inch thickness
2 tbsp. BBQ sauce with 45 calories or less per 2-tbsp. serving
Spices: onion powder, salt, black pepper

Preheat oven to 350 degrees. Spray an 8" X 8" baking pan with nonstick spray.

Place chopped broccoli slaw in a medium microwave-safe bowl. Microwave for 2 minutes, or until softened.

Add cheese wedges to the broccoli slaw, and mix thoroughly.

Season chicken with 1/8 tsp. onion powder, 1/8 tsp. salt, and 2 dashes black pepper. Evenly divide slaw mixture between the centers of the cutlets.

Roll up each cutlet over the slaw mixture. If needed, secure with toothpicks. Place in the baking pan.

Cover pan with foil, and bake for 20 minutes.

Remove foil, and evenly spoon BBQ sauce over chicken. Bake until chicken is cooked through, about 15 minutes. Eat up!
