This is like the kid brother of the classic brunch dish. We mean that in the best way possible: We love the tasty waffle stack like family!

Prep: 5 minutes
Cook: 10 minutes

1 tsp. white vinegar
1 frozen low-fat waffle
1 oz. sliced 97% - 98% fat-free ham (about 2 slices)
1 tbsp. fat-free plain Greek yogurt
1 tsp. light mayonnaise
1 tsp. Hellmann's/Best Foods Dijonnaise (or another mild creamy Dijon mustard)
1 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 drop lemon juice
1 large egg

Fill a medium pot with 2 inches of water. Add vinegar, and bring to a boil.

Meanwhile, toast waffle, and top with ham. To make the sauce, in a small microwave-safe bowl, combine yogurt, mayo, Dijonnaise, butter, and lemon juice. Mix until uniform.

Once water is boiling, lower temperature until a steady simmer is reached. Crack egg into a small shallow bowl.

Give water a stir, and gently add egg. Cook until egg white is mostly opaque, about 3 minutes. Using a slotted spoon, carefully transfer egg to a layer of paper towels to absorb excess water. Transfer egg to the ham-topped waffle.

Microwave sauce for 15 seconds, or until hot, and stir. (If you prefer a thinner sauce, add a bit of water). Spoon over egg, and dig in!

Cook: 5 minutes or less

1/4 cup fat-free plain Greek yogurt
1 tbsp. vanilla protein powder with about 100 calories per serving
1/4 tsp. cinnamon
1/4 cup 2% low-fat cottage cheese 
1 medium-large high-fiber flour tortilla with 110 calories or less (like the kinds by La Tortilla Factory)
1/3 cup sliced strawberries, raspberries, and/or blueberries
1 tbsp. shredded sweetened coconut
1 tsp. mini semi-sweet chocolate chips

In a small bowl, combine yogurt, protein powder, and cinnamon. Mix until uniform. Stir in cottage cheese.

Microwave tortilla on a microwave-safe plate for 10 seconds, or until warm. Spread mixture down the center of the tortilla. Top with remaining ingredients.

Wrap up tortilla by first folding one side in (to keep filling from escaping), and then rolling it up from the bottom.
