YUM TIME! It turns out that putting an apple-pie-like mixture on top of French toast is delicious -- who would have guessed? (OK, fine, everyone.)

Ingredients:
1 1/2 cups chopped Fuji (or other sweet) apple
1/8 tsp. lemon juice
1 no-calorie sweetener packet (like Splenda or Truvia)
3/4 tsp. cinnamon
1/3 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/2 tsp. vanilla extract
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
2 slices light bread
Optional topping: Fat Free Reddi-wip
Directions:
Place apple in a large microwave-safe mug sprayed with nonstick spray. Add lemon juice, sweetener, and 1/2 tsp. cinnamon. Stir to mix. Microwave for 3 minutes, or until softened and slightly gooey.
In a wide bowl, mix egg substitute, vanilla extract, and remaining 1/4 tsp. cinnamon.
Bring a skillet sprayed with nonstick spray to medium heat. Add butter, and let it coat the bottom. Meanwhile, coat the bread slices on all sides with egg mixture.
Cook egg-coated bread until golden brown, about 2 minutes per side.
Top bread slices with gooey apples. Dig in!
