Ingredients:
2 slices light bread
1 tbsp. reduced-fat creamy peanut butter
1 tbsp. low-sugar strawberry preserves
1/4 cup sliced strawberries
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
Directions:
Lay bread slices flat. Spread one slice with peanut butter and the other slice with preserves. Evenly layer strawberries over the PB-topped slice. Top with the other bread slice, preserves side down. Spread the top of the sandwich with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium-high heat. Place sandwich in the skillet, buttered side down. Spread the top with the remaining 1 tsp. butter.
Cook until bread is lightly browned, about 2 minutes per side. Enjoy!
