Ingredients:
2 frozen low-fat waffles
2 tbsp. finely chopped apple
1 tbsp. reduced-fat cream cheese
1 tbsp. 2% cottage cheese
1/8 tsp. cinnamon
1 drop vanilla extract
2 tsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 tsp. powdered sugar
Optional topping: sugar-free pancake syrup
Directions:
Lightly toast waffles.
In a medium bowl, combine apple, cream cheese, cottage cheese, cinnamon, and vanilla extract. Mix thoroughly.
Evenly top one waffle with apple mixture, and top with remaining waffle. Spread the top with 1 tsp. butter.
Bring a skillet sprayed with nonstick spray to medium heat. Place sandwich in the skillet, buttered side down. Spread the top with remaining 1 tsp. butter.
Cook waffle sandwich until golden brown, about 2 minutes per side. Sprinkle with powdered sugar, and enjoy!
