Slow-Cookin' Pulled Chicken

PER SERVING (1/2 cup): 149 calories, 1g fat, 462mg sodium, 10g carbs, <0.5g fiber, 9g sugars, 22.5g protein -- PointsPlus® value 3*

This shredded BBQ chicken is FANTASTIC over salads, piled onto light buns, stuffed inside high-fiber tortillas with (rinsed) cole slaw, or eaten all by itself. Yummmmmm!




Ingredients:
1 1/2 lb. raw boneless skinless lean chicken breasts, halved
1 cup canned tomato sauce
1/2 cup ketchup
2 tbsp. plus 2 tsp. brown sugar (not packed)
2 tbsp. plus 2 tsp. cider vinegar
2 tsp. garlic powder
Optional: red pepper flakes, to taste

Directions:
Place all ingredients except the chicken in the slow cooker. Stir until mixed. Add chicken and coat well with the sauce.

Cover and cook on high for 3 - 4 hours OR on low for 7 - 8 hours, until chicken is fully cooked.

Remove all the chicken and place it in a bowl. Shred each piece using two forks -- one to hold the chicken in place and the other to scrape across the meat and shred it. Return the shredded chicken to the slow cooker, and mix well with the sauce.

If you're serving a group, keep the slow cooker on its lowest setting, so the chicken stays warm. If you like, season to taste with red pepper flakes. Eat up!

Pump-Up-the-Jam Cocktail Weenies

PER SERVING (3 cocktail weenies with sauce): 75 calories, 1.5g fat, 619mg sodium, 12.5g carbs, 0g fiber, 3g sugars, 6g protein -- PointsPlus® value 2*

When we "tweeted" about this recipe idea, an HG fan put it best: "If slow cooker hot dogs are wrong, I don't wanna be right!" We wholeheartedly agree. These li'l pups are sweet, tangy and super-delicious. Serve 'em to pals, or keep 'em all to yourself...


Ingredients:
14 Hebrew National 97% Fat Free Beef Franks (or another brand of nearly fat-free hot dogs with 40 - 45 calories each)
1 cup chili sauce (the kind found by the ketchup, like the one by Heinz)
3/4 cup sugar-free grape or seedless blackberry jam (like the ones by Smucker's)
3/4 cup very finely chopped onion
1 1/2 tsp. Dijon mustard

Directions:
Place all ingredients except for the hot dogs in your slow cooker. Stir until completely mixed.

Cut each hot dog into thirds, leaving you with cocktail-sized franks. Add those to the pot, and gently mix to coat.

Cover and cook on low for 3 - 4 hours, occasionally giving it a gentle stir (if you're around to do it; if not, it's okay).

Stir well and then serve up franks with extra sauce on top!

MAKES 14 SERVINGS 
Glaze of Glory Candied Carrots

PER SERVING (1 cup): 94 calories, 1.25g fat, 286mg sodium, 21.5g carbs, 3g fiber, 10g sugars, 1g protein -- PointsPlus® value 2*

Let these babies cook all day! There are carrots, peppers, and onions in a fruity, yummy sauce. All the sweet goodness of glazed carrots without the gooey, gloppy, sugary calories.




Ingredients:

One 32-oz. bag (about 6 cups) baby carrots
1 onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/4 cup sugar-free apricot preserves (like the kind by Smucker's)
2 tbsp. brown sugar (not packed)
1 1/2 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
1 tbsp. cornstarch
1 tsp. cinnamon
1/2 tsp. salt, or more to taste
1/4 tsp. nutmeg
Optional: black pepper, cayenne pepper, ground ginger

Directions:
Place all veggies in the slow cooker.

In a small dish, combine preserves, brown sugar, butter, cinnamon, salt, and nutmeg. Stir well. Top veggies in the slow cooker with this mixture.

Use a large spoon to stir the contents of the slow cooker up a bit. (Don't worry if the preserves mixture isn't completely distributed.)

Cover and cook on high for 3 - 4 hours OR on low for 7 - 8 hours, stirring occasionally (if you're around to do it; if not, it's okay).

Once veggies are cooked, turn off the heat on the slow cooker. Give contents a good stir, ensuring that the sauce is evenly distributed.

In a small dish, combine cornstarch with 2 tbsp. cold water, and stir until cornstarch has dissolved. Add to slow cooker and mix well.

Leave pot uncovered for 15 minutes to allow sauce to thicken. Stir and, if you like, add additional salt and optional ingredients to taste. Then enjoy!
