Someday, maybe we'll run out of things to mix into egg substitute and pop in the microwave. Until then, we're gonna keep bringing you super-simple breakfast recipes. Put THAT in a mug and nuke it!

Fajitas have officially made the leap to breakfast... Muy delicioso!

Ingredients:

1/4 cup chopped red bell pepper

1/4 cup chopped onion

1 oz. cooked skinless lean chicken breast, chopped

1 tsp. dry fajita seasoning mix

1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)

2 tbsp. shredded fat-free cheddar cheese

1 tbsp. fat-free sour cream

Directions:

Spray a large microwave-safe mug with nonstick spray. Add veggies, chicken, and fajita seasoning. Stir well to evenly distribute seasoning. Microwave for 1 - 2 minutes, until veggies have softened.

Add egg substitute and microwave for 1 minute.

Add cheese and gently stir. Microwave for an additional 45 - 60 seconds, until scramble is just set.

Allow to cool slightly. Top with sour cream and enjoy!

Cook: 5 minutes

Ingredients:

1/4 cup chopped green bell pepper

2 tbsp. chopped onion

1/2 cup fat-free liquid egg substitute

1 oz. sliced 97% to 98% fat-free ham (about 2 slices), chopped

2 tbsp. shredded fat-free cheddar cheese

Directions:

In a large microwave-safe mug sprayed with nonstick spray, microwave pepper and onion for 1 1/2 minutes, or until softened.

Blot away excess moisture. Add egg substitute, stir, and microwave for 1 minute.

Stir in ham and cheese. Microwave for 1 minute, or until set. Eat up!

Worry not! There are no actual explosions associated with this b-fast recipe (as long as you follow directions well).

Ingredients:

1/2 cup sliced mushrooms

1/4 cup thinly sliced onion

1/4 cup chopped asparagus

1/4 cup diced tomato, patted dry

1/2 cup fat-free liquid egg substitute (like Egg Beaters Original)

1 wedge The Laughing Cow Light Original Swiss cheese

Optional seasonings: black pepper, garlic powder

Directions:

In a large microwave-safe mug sprayed with nonstick spray, microwave mushrooms, onion, asparagus, and tomato for 2 minutes, or until softened.

Blot away excess moisture. Add egg substitute, stir, and microwave for 1 minute.

Stir in cheese wedge, breaking it into pieces. Microwave for 1 minute, or until set. Enjoy!
