Turnip the Disco Fries
PER SERVING (1/2 of recipe): 284 calories, 1g fat, 1,058mg sodium, 58g carbs, 9.5g fiber, 15.5g sugars, 13g protein -- PointsPlus® value 7*
- 2 medium-sized turnips (about 12 oz. each), scrubbed clean
- 1 medium-sized potato (about 12 oz.), scrubbed clean
- 1/8 tsp. salt
- 1/8 tsp. black pepper
- 1/2 cup jarred fat-free or nearly fat-free chicken gravy
- 3 slices fat-free American cheese, torn into strips
- Optional topping: chopped chives
Preheat oven to 425 degrees. Spray a large baking sheet with nonstick spray and set aside.
Carefully cut turnips and potato into French-fry-shaped spears using a crinkle cutter if you have one. Place them in a single layer on the baking sheet and sprinkle evenly with salt and pepper. If needed, use another baking sheet sprayed with nonstick spray.
Bake in the oven until tender on the inside and crispy on the outside, about 30 minutes, carefully flipping spears about halfway through. (The thicker the spears, the longer the bake time.) Set aside to slightly cool.
In a small nonstick pot on the stove, heat gravy over a low temperature until hot, 1 - 2 minutes.
Once cool enough to handle, transfer fries to a microwave-safe plate. Evenly top with strips of cheese. Microwave until cheese has just melted, about 30 seconds. Top with chives, if you like.
Give gravy a stir and serve alongside cheese fries. Enjoy!
