Healthy Baked French Fry Recipes: Crispy Eggplant Fries, Apple Fries

Who says fries can only be made from potatoes? Not us! We've got two fun new recipes: One made from eggplant and one from apples! Baked (not fried) and complete with a yummy panko coating, you'll flip for these guilt-free fries... (Keep reading for tips on making them completely clean!)

Hungry Girl's Crispy Eggplant Fries Recipe

It's like eggplant Parm, finger-food style! Yesss...

Prep: 15 minutes
Cook: 25 minutes

Ingredients:

1 medium eggplant (about 12 oz.), peeled, ends removed

3/4 cup whole-wheat panko breadcrumbs

1/2 tsp. garlic powder

1/2 tsp. onion powder

1/2 tsp. Italian seasoning

1/2 tsp. salt

1/4 tsp. black pepper

1/2 cup (about 4 large) egg whites or fat-free liquid egg substitute

Directions:

Preheat oven to 400 degrees. Spray 2 large baking sheets with nonstick spray.

Cut eggplant into French-fry shaped spears.

In a medium-large bowl, combine breadcrumbs and seasonings.

Place eggplant in another large bowl. Top with egg whites/substitute, and toss to coat.

One at a time, shake eggplant to remove excess egg, and lightly coat with breadcrumb mixture. Evenly place on the baking sheets, and top with any remaining breadcrumbs.

Bake for 12 minutes.

Flip eggplant. Bake until lightly browned and crispy, about 12 more minutes.

Ingredients:

1 medium Fuji or Gala apple (about 6 oz.)

1/4 cup whole-wheat panko breadcrumbs

Half a packet no-calorie sweetener (like Truvia)

1/8 tsp. cinnamon

Dash salt

1/4 cup (about 2 large) egg whites or fat-free liquid egg substitute

1/8 tsp. maple extract

Directions:

Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.

Core and peel apple. Cut into half-moon slices about 1/4-inch thick.

In a medium bowl, combine breadcrumbs, sweetener, cinnamon, and salt.

In another medium bowl, mix egg whites/substitute with maple extract. Add apple slices, and toss to coat.

One at a time, shake apple slices to remove excess egg and lightly coat with breadcrumb mixture. Evenly lay on the baking sheet.

Bake for 10 minutes.

Flip apple pieces. Bake until lightly browned and crispy on the outside and slightly softened on the inside, about 10 more minutes.

MAKES 1 SERVING
