Bell Pepper Nachos

Here’s a creative twist on a classic! Remove the stem end and seeds from 6 sweet mini bell peppers. Slice them in half lengthwise, and bake at 400ºF for 10 minutes, flipping halfway through. Blot dry, lay cut-side up, top with 3 tbsp. shredded reduced-fat Mexican-blend cheese, and bake until melted. Top with 2 tbsp. Ortega Homestyle Salsa, 1 crushed Ortega Cauliflower & Corn Taco Shell, and 1 tbsp. light sour cream. YUM!

Quesadilla Hack

Entire recipe: 202 calories, 4.5g total fat (2.5g sat. fat), 630mg sodium, 30g carbs, 1g fiber, 1.5g sugars, 9.5g protein

This one’s as fun to make as it is delicious to eat! Start with 1 Ortega Cauliflower & Flour Tortilla, and top each quarter with a different topping: 2 tbsp. Ortega Fat Free Refried Beans, 2 tbsp. shredded reduced-fat Mexican-blend cheese, 1 tbsp. Ortega Taco Sauce, and 1 tbsp. Ortega Fire Roasted Diced Green Chiles. Make a cut from the center of the tortilla to the bottom, dividing the lower half into two quarters. Fold one quarter over the next until you have a stacked quesadilla in the shape of a triangle. Cook until crispy, about 4 minutes, flipping carefully halfway.

Southwest Guacamole Dip

1/8th of recipe (about 1/4 cup): 85 calories, 4g total fat (0.5g sat. fat), 143mg sodium, 8g carbs, 2.5g fiber, 2g sugars, 4.5g protein

It’s not Cinco de Mayo without guacamole! Thoroughly mix 8 oz. mashed avocado (about 2 small avocados), 1 cup fat-free plain Greek yogurt, and 2 tbsp. Ortega Guacamole Seasoning mix. Stir in 1/2 cup Ortega Original Flavor Black Beans (drained and rinsed) and 1/3 cup Green Giant SteamCrisp Mexicorn (drained)... Now start dippin’!

Mexican Zucchini Skins

Here’s a zesty spin on potato skins! Pierce 2 medium-large zucchini several times with a fork, and microwave for 2 minutes, flipping halfway through. Cut them in half lengthwise, and scoop out the insides. Pat dry, and fill with 1/2 cup Ortega Fat Free Refried Beans and 1/2 cup shredded reduced-fat Mexican blend cheese. Bake at 400ºF until cheese has melted, about 8 minutes. Cut each piece in half widthwise. Top with 2 tbsp. Ortega Thick & Chunky Medium Salsa and 8 slices Ortega Hot Sliced Jalapeños!
