We visited our beloved Trader Joe’s to kick off 2026 with some great food finds, and as always, they delivered. (OK, they didn’t literally deliver, but wouldn’t that be great?) Trader Joe’s Turkish Inspired Stuffed Eggplant

Looking for a new heat ‘n eat mini meal, snack, or side? This low-carb entrée is a major YES. Each large piece is a softly roasted eggplant half, stuffed with seasoned ground beef and topped with a tomato sauce and sliced tomatoes. A little tangy, a LOT tasty, with a perfect kick of smoked paprika. It’s a limited-time item according to the website, so snap it up ASAP!

This is a top-tier find—it’s not new, but Lisa’s obsessed with it and so are HG staffers! Incredible savory-sweet noodles with the perfect hint of sesame oil, mixed with spinach, onion, carrot, and bell peppers. Eat this one on its own, or use it as a meal starter by mixing in lean cooked protein (lots of options at TJs!) or serving with an entrée. Heats up in minutes from frozen in the microwave or a skillet!



Sunset Pop Its Bite-Sized Cucumbers

This isn’t a Trader Joe’s exclusive, but we found the petite cucumbers there, and boy, are we glad we did! The adorable little snacking cucumbers are tiny, cute, perfectly crispy, and just right for dipping. We love turning them into the world's tiniest cucumber subs! Pick some up, and snack on them by the handful.
