Speedy mini-meal alert! Scoop 1 1/2 cups frozen riced cauliflower and 1/2 cup frozen meatless crumbles into a microwave-safe bowl. Microwave for 2 minutes, or until hot. Drain any excess water. Stir in 2 tbsp. salsa and any seasonings you like. Top with 2 tbsp. shredded reduced-fat Mexican-blend cheese, and microwave until melted. Delicious!

One single-serving casserole fix, coming right up! Microwave a 12-oz. bag frozen zucchini noodles for 6 minutes, or until hot. Drain well, and place in a microwave-safe bowl. Stir in a 2.6-oz. pouch albacore tuna in water, 1/4 cup frozen peas, and 2 wedges The Laughing Cow Light Creamy Swiss cheese. Cover and microwave for 1 minute, or until hot. Mix thoroughly, and season to taste.



Veggie Pizza-dilla

Veggie pizza, meet quesadilla! Microwave 1 cup chopped spinach for 45 seconds, or until wilted. Bring a large skillet sprayed with nonstick spray to medium-high heat. Lay a low-carb flour tortilla with 70 calories or less in the skillet, and spread half of the tortilla with 2 tbsp. pizza sauce. Tear a stick of light string cheese into pieces, and place over saucy half of the tortilla, along with the spinach. Add your choice of seasonings, fold the tortilla in half, and press gently to seal. Cook until crispy, about 2 minutes per side, and slice into wedges.



Mini Cheeseburger Pies
