Caprese Skewers

Cut 2 sticks of light string cheese into 8 coins. Starting with 32 grape or cherry tomatoes, 16 basil leaves, and 16 toothpicks, build your skewers: Load each toothpick with a tomato, a cheese coin, a basil leaf, and another tomato. Snack-Size Egg Mug

In a microwave-safe mug sprayed with nonstick spray, microwave 1/2 cup egg whites/liquid egg substitute for 1 minute.
