Girl Scout Cookie Inspired Rice Cake Snacks

We love the Girl Scouts of the USA and their delicious cookies! So much so that we were inspired to make our own super-sized snacks with rice cakes (aka CRUNCHCAKES) inspired by their iconic cookies, ones you can enjoy long after the season ends. (Is there room in our lives for both the originals AND these snack hacks? Yes!)



Samoas/Caramel deLites Inspired Crunchcake

Entire recipe: 148 calories, 5g total fat (3.5g sat. fat), 73mg sodium, 25.5g carbs, 1.5g fiber, 13.5g sugars, 1.5g protein

Drizzle 1 caramel-flavored rice cake with 1 1/2 tsp. light caramel dip. (If needed, first microwave dip for 10 seconds to soften it.) In a small skillet over medium heat, cook and stir 2 tsp. sweetened shredded coconut until lightly browned, about 2 minutes. In a small microwave-safe bowl, microwave 2 tsp. semi-sweet chocolate chips for 30 seconds, or until melted. Top rice cake with melted chocolate and toasted coconut.



Tagalongs/Peanut Butter Patties Inspired Crunchcake

Thin Mints Inspired Crunchcake

S’mores Inspired Crunchcake

Adventurefuls Inspired Crunchcake
