Spinach & Artichoke Pasta with Sausage

Entire recipe: 250 calories, 12g total fat (4.5g sat. fat), 660mg sodium, 18g carbs, 5g fiber, 3g protein, 19g protein

The Trader Joe's Products: Hearts of Palm Pasta (shelf stable), Sweet Italian Chicken Sausage (refrigerated), Creamy Spinach & Artichoke Dip (refrigerated)

How To: Drain and rinse 1 package of the pasta. Slice 1 sausage into coins. Spray a skillet with nonstick spray and bring to medium heat. Add drained pasta and sausage coins. Cover and cook for 6 minutes, or until hot, stirring halfway through. Meanwhile, place the frozen block of dip into a microwave-safe bowl. Microwave on high for 2 minutes. Stir well. Microwave for an additional 1–2 minutes. Remove skillet from heat. Add 1/4 cup dip (reserve the remaining dip for another use). Stir to coat.

Get Creative! Use different noodles (we love the Zucchini Spirals), other proteins (precooked chicken), and more amazing dips.



Mexican Chicken Bowl

The Trader Joe's Products: Pollo Asado Autentico (refrigerated), Organic Riced Cauliflower (frozen), Pineapple Salsa (shelf stable)

How To: Cook 1 package of the chicken according to package instructions. (Alternatively, cook it in a skillet or in the oven.) Roughly chop 3 oz., and save the remainder for another use. Spray a skillet with nonstick spray and bring to medium heat. Add 2 cups of the cauliflower, 1 tsp. garlic powder, 1 tsp. onion powder, and 1/2 tsp. smoked paprika. Cook and stir until hot, about 4 minutes. Transfer seasoned cauliflower to a bowl, and top with chopped chicken and 2 tbsp. of the salsa.

Get Creative! Add frozen brown rice for a more substantial meal. Finish with your favorite toppings: fresh cilantro, Greek yogurt or light sour cream, reduced-fat Mexican-blend cheese, avocado, etc. You can also use the Spicy Mexican-Style Riced Cauliflower if you like a kick of heat!



Creamy Shawarma Salad

Entire recipe: 235 calories, 11g total fat (3g sat. fat), 560mg sodium, 11g carbs, 2g fiber, 4g sugars, 25g protein

How To: Cook 1 package of the chicken according to package instructions. (Alternatively, cook it in a skillet or in the oven.) Roughly chop 3 oz. of the chicken, and save the remainder for another use. Place about 4 cups of the lettuce in a large bowl. Top with chopped chicken and 2 tbsp. of the dip.

Chili-Lime Chicken Tenders

1/2 of recipe (4 tenders): 332 calories, 15g total fat (4g sat. fat), 645mg sodium, 19g carbs, 1.5g fiber, 3g sugars, 28g protein

The Trader Joe's Products: Chili & Lime Flavored Rolled Corn Tortilla Chips (shelf stable), Chicken Breast Fillets (refrigerated), Everything and the Elote Greek Style Yogurt Dip (refrigerated)

How To: Finely crush 1.5 oz. (about 23) of the chips and place in a wide bowl. Cut 8 oz. of the chicken into 8 strips, place in another wide bowl, and season with 1/8 tsp. salt. Add 2 tbsp. of the dip to the bowl of chicken, and mix to coat the tenders. Coat each tender with crushed chips, and place in an air fryer basket sprayed with nonstick spray. Set air fryer to 360ºF, and cook until crispy and cooked through, about 12 minutes. Serve tenders with 1/4 cup additional dip for… you know... dipping.
