Pistachio cream is basically sweet nut butter, and it’s a must-have for Dubai-chocolate creations. Feel free to use any brand, but we got this one and love it. Mix it with creamy, less-calorie-dense ingredients like light ricotta cheese or low-fat cottage cheese to make a little go a long way.



Shredded Wheat Cereal

YES, the old-school rectangles of cereal! This is an unexpectedly great swap for the kadayif or kadaifi (aka shredded phyllo pastry) found in traditional Dubai chocolate treats. When you crumble it up, it has the same texture, but it’s more accessible and affordable than real kadayif—and it has fewer calories and more fiber.



Mini Semi-Sweet Chocolate Chips

These mini chocolate chips are easy to measure out, whether you’re melting them into a drizzle or mixing them into your creamy components. In a small bowl, mix 2 tbsp. light/low-fat ricotta cheese, 1 1/2 tsp. pistachio cream, and 2 drops almond extract until smooth and uniform. Fold in 1 1/2 tsp. mini (or chopped) semi-sweet chocolate chips. Slice stem ends off 5 large strawberries. Use a narrow spoon to remove about half of the flesh. Fill berries with ricotta mixture. Top with 1 tbsp. crushed shredded wheat cereal (about 4 mini biscuits).



Open-Faced Dubai Chocolate S’mores

Entire recipe: 199 calories, 6.5g total fat (2.5g sat. fat), 89mg sodium, 34g carbs, 2.5g fiber, 14g sugars, 3g protein

Place 1 graham cracker sheet (4 crackers) on a microwave-safe plate, and top with 12 mini marshmallows. Microwave for 15 seconds, or until marshmallows are puffy and melty. Microwave at 50% power for 40 seconds, or until melted, stirring halfway through. Dubai Chocolate Cottage Cheese Toast

Entire recipe: 195 calories, 7g total fat (3g sat. fat), 287mg sodium, 22g carbs, 3.5g fiber, 8g sugars, 11g protein

Toast 1 slice light bread with 40–45 calories. In a small bowl, mix 1/4 cup low-fat cottage cheese, 2 tsp. pistachio cream, and 2 drops almond extract until uniform.
