Healthy Slow-Cooker Garlic Parm Chicken

Feb 7 2019
We have an announcement to make: This may very well be the most decadent chicken dish to come out of the Hungryland kitchen this year. (Sure, it’s only February, but that’s still impressive when you cook chicken as much as we do!) It's creamy, crammed with flavor, and crazy versatile. Will we be spooning this over our spaghetti squash, zucchini noodles, and cauliflower rice? Yesssss!

Prep: 5 minutes
Cook: 3 - 4 hours or 7 - 8 hours

1 1/2 lbs. raw boneless skinless chicken breast

1/4 tsp. each salt and black pepper

1 1/2 cups chicken broth

1 cup chopped onion

1 tbsp. chopped garlic

1/2 cup light/reduced-fat cream cheese (room temperature)

1/4 cup grated Parmesan cheese

1/2 tsp. garlic powder

1/2 tsp. onion powder

Place chicken in a slow cooker, and season with salt and pepper. Add broth, onion, and garlic.

Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours, until chicken is fully cooked.

Meanwhile, place cream cheese in a large bowl. Stir until smooth. Add remaining ingredients, and mix until uniform.

Transfer chicken to a cutting board, and roughly chop. Add to the bowl.

Using a slotted spoon, transfer onion to the bowl. (Save the leftover broth for another time… It’s delicious!)

Mix well.

Amazon Find of the Day: Reynolds Slow Cooker Liners 2 Pack

Slow cookers are spectacular, but they don’t clean themselves. (How great would it be if they did?) That’s why we love these Slow Cooker Liners by Reynolds. They fit slow cookers of all shapes and sizes, so you can literally opt out of cleanup. Just slide one on your cooker before adding the ingredients, and toss it when you’re done. No soaking. No scrubbing. No screaming at stubborn bits of chicken that just won’t budge. It’s almost as good as someone offering to do the dishes (which would still be nice, if anyone's offering)…
