Slow-Cooker Minestrone Soup without Pasta + More Healthy Slow-Cooker Soup Recipes
Is there anything as comforting as a big pot of soup on a chilly day? Nope. And our take on a classic is packed with extra veggies in place of pasta, which means it's gluten free!

Cook: 3 - 4 hours or 7 - 8 hours, plus 45 minutes
4 cups chicken or vegetable broth
Two 14.5-oz. cans stewed tomatoes (not drained)
One 15-oz. can kidney beans, drained and rinsed
1 cup green beans cut into 1/2-inch pieces
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onion
1 tbsp. chopped garlic
2 tsp. Italian seasoning
2 bay leaves
1/4 tsp. black pepper
1 1/2 cups chopped zucchini
Optional toppings: grated Parmesan cheese, fresh chopped basil
Add all ingredients except zucchini to a slow cooker, and mix well.
Cover and cook on high for 3 - 4 hours or on low for 7 - 8 hours, until veggies have softened.
If cooking at low heat, increase to high. Remove bay leaves, add zucchini, and mix well. Cover and cook for 30 - 45 minutes, until zucchini is tender.
