Apr 24 2019
Question@2x Hi Lisa,

Longtime HG fan here! I have to know, what are YOUR personal favorite Hungry Girl recipes? (My favorite is the Yum Yum Brownie Muffins!)

Fan-Girl Fran
Answer@2x Hi Fran,

With 15 years of Hungry Girl recipes, it’s hard to choose! But there are a few that really stand out… ones I make ALL the time. So without any further ado, here are five of my favorites!

The Egg Mug Classic

Entire recipe: 125 calories, 1.5g total fat (1g sat fat), 547mg sodium, 3.5g carbs, 0g fiber, 2.5g sugars, 20g protein

I’ll never forget the first time I realized I could make an egg scramble in the microwave -- life-changing! Just grab some egg whites or egg substitute, a wedge of Laughing Cow (or light cream cheese), and a LARGE microwaveable mug. Mix it, microwave it, and you’ve got breakfast in 5 minutes or less! Check out all these variations too

Sloppy Jane Stir-Fry

Entire recipe: 339 calories, 6g total fat (2.5g sat fat), 700mg sodium, 31.5g carbs, 11g fiber, 16g sugars, 38.5g protein

This meal is a staple on the Hungry Girl Diet, and with good reason... You get a HUGE and satisfying serving for less than 350 calories! It’s super easy to make and tastes just like the iconic sandwich. If I don’t have all the ingredients on hand, I’ll make a simplified version with broccoli cole slaw, tomato sauce, extra-lean ground beef, and seasonings. Mmmmm!

Mac Attack Burger Bowl

Entire recipe: 316 calories, 12.5g total fat (4.5g sat fat), 833mg sodium, 19g carbs, 4.5g fiber, 11.5g sugars, 30.5g protein

I love a good fast-food fix, and this supersized bowl is the definition of a better-for-you burger swap. I whipped up my version of McDonald’s special sauce, and replaced the carby bun with shredded lettuce. It’s everything I love about a burger with less than half the fat & carbs of a Big Mac. Ditch the drive thru, and dig in!

Pizza-fied Chicken

Entire recipe: 272 calories, 8.5g total fat (3.5g sat fat), 633mg sodium, 6g carbs, 1g fiber, 2.5g sugars, 40.5g protein

One of my cooking philosophies: You can make ANYTHING taste like pizza if you top it with tomato sauce, mozzarella, and pepperoni! Here chicken breast acts as the pizza crust. This is basically the low-carb, high-protein pizza of my dreams. Speaking of low-carb recipes inspired by pizza, these Pizza-bellas made with portabella mushrooms also rank highly on my list!

Naked Chicken & Eggplant Parm

1/4th of pan (4" X 4"): 350 calories, 12g total fat (5.5g sat fat), 814mg sodium, 14.5g carbs, 6g fiber, 7.5g sugars, 45.5g protein

Perfectly cooked eggplant paired with flavorful tomato sauce is one of my all-time favorite combinations, and this 5-ingredient casserole is a ridiculously delicious way to enjoy it. Also awesome: my Veggie-rific Noodle-Free Lasagna and Saucy Eggplant Patty Tower. Hearty comfort food with a healthy spin!

Bonus: My Favorite Simply 6 Recipes!

My latest cookbook, Hungry Girl Simply 6, was released last month, and it’s easily my favorite HG cookbook yet! (But of course, I say that about all my books.) I just love that everything can be made with 6 ingredients or less. Here are some of my top picks…

⭑ Broc ‘n Cheddar Crustless Quiche (I made this on The Dr. Oz Show!)
⭑ Instant-Pot Honey BBQ Meatballs (I could eat these every day)
⭑ Greek Z’paghetti (ready in 15 minutes!)
⭑ Chocolate Chip Cookies (47 calories!)

Check it out, and let me know which are YOUR favorites on Facebook!
